MARINATED SKIRT STEAK
(makes 8 servings, so you can cut it in half)
ingredients
3/4 cup balsamic vinegar
1/2 cup corn oil or other neutral oil such as grapeseed or canola
1/4 cup Worcestershire sauce
2 shallots, roughly chopped
2 garlic cloves
1 tablespoon cayenne pepper
1 tablespoon chopped fresh cilantro leaves
1 teaspoon freshly ground black pepper
1 tablespoon kosher salt
4 pounds skirt steak, cleaned of all exterior fat and connective tissue preparation
Put all ingredients except the steak in a blender and blend until smooth.
Pour the marinade over the skirt steak in a nonreactive pan. Break Point
Marinate, refrigerated, for 3 to 4 hours before grilling, but no more than 10 hours.

When ready to cook the steaks, prepare your grill for grilling.

Remove the skirt steak from the marinade and clean away any excess marinade with the back of a knife.

Grill the steak over medium-high heat for 4 to 5 minutes per side to serve it rare to medium-rare.

When cooked, slice the steak thinly against the grain, starting at one corner and cutting on the bias. Serve either hot or at room temperature.

Skirt steak is a plate cut (like flank steak) and can be a little on the tough side. Use a marinade with some tang and then cook it fajita style with onions, peppers and mushrooms. Slice across the grain and put in some tortillas for some great fajitas.

Alternately you can do a slower braise cooking in a gravy sauce (I like a mushroom sauce) that will help loosen it up a bit.

Adapted from How to Cook Meat by Chris Schlesinger and John Willoughby. Flank or round steak can be used instead of the skirt steak.
2 lbs skirt steaks
1 cup fresh lime juice (about 8 limes)
For the Rub
3 tablespoons cumin seeds (or 1 1/2 tablespoons ground cumin)
2 1/2 tablespoons minced garlic
1/3 cup roughly chopped fresh cilantro
kosher salt and freshly cracked black pepper
For the Relish
1/2 cup finely chopped pitted green olives
1 teaspoon chopped dried red chili peppers, of your choice to taste
1/4 cup olive oil
2 tablespoons freshly cracked black pepper

4 servings

28 minutes 20 mins prep

Place the steak in a shallow dish and pour the lime juice over it. Cover the dish and let it stand in the refrigerator for 30 minutes to 1 hour, turning occasionally.
Light up a fire in your grill.
In a small bowl, combine all the rub ingredients and mix well. Remove the steak from the marinade, pat dry with paper towels, and rub it all over with the spice rub, pressing gently to be sure it sticks.
When the fire has died down and the coals are hot (you can hold your hand 5 inches from the grill surface for 1 to 2 seconds), place the steak on the grill and cook until well-seared on one side, about 4 minutes. Turn and continue to cook to the desired doneness, about 4 minutes more for rare. To check for doneness: Make a 1/4-inch cut in the thickest part of the meat and take a peek; it should be slightly less done than you like it. Remove the steak from the heat, cover it loosely with foil, and allow it to rest for 5 minutes while you make the relish.
In a medium bowl, combine all the relish ingredients and mix well.
Slice the steak as thin as possible against the grain and serve with the relish. Enjoy!
Note* You may substitute flank steak, or round steak for the skirt.

Try marinating it. Place it in a ziploc bag with olive oil, a little vinegar (red is good), garlic, herbs (fresh italian parsley) for a few hours. After grilling, let it rest for 10 minutes, so the juices stay in the meat, and slice it ACROSS the grain. Skirt steak tends to be tough, but when cooked this way, it's great.

Ohhh I love skirt steak, my husband is from Argentina (the home of great beef) and they refer to skirt steak as Churrasco. I would not recommend putting it on the george foreman grill because when you close it down it will squeeze out all the juices. The best way to prepare it is to pan fry/saute.

This is how I prepare it for my husband, and you can use your own judgement how much seasoning to use based on how large your peace of steak is.

I Marinate with the follow ingredients

Salt
Black pepper
garlic powder
onion powder (optional)
worchestshire sauce

I cover and let sit for 1 hour and then saute/pan fry in very little oil, about 2-3 minutes per side, depending on how well you want it cooked. This cut of steak has a lot of flavor and does not require an array of different spices so i keep it simple with salt, pepper, garlic and onion and worchestshire. You need to make the natural flavors come through. I always serve it with a delicious chimmichuri sauce......YUM

I am not sure what the red sauce could be there are many. I have recipes for over 30 of them.

Skirt steaks are a tough but cheap cut of meat. Always cut them against the grain.

Here is how I cook them so they come out very tender and flavorful:

Take the skirt steak and season it, use whatever season you like best.

Turn your oven on to 300.
Take the steak(s) and lay them in a flat layer in a cookie sheet, do not over lap them!
This next part sounds a bit bizarre but trust me it works.
Take plastic wrap and tightly wrap the cookie sheet with the steak on it. Wrap it all the way around, going over and under. Do about 3 or 4 rounds. Make sure you get the ends as well. The plastic wrap WILL NOT MELT! Next cover the same way with foil only dong 1 wrap around the pan.

Stick it in the oven nd bake it for about 45 minutes.

Take it out of the oven and let it sit fo 5 minutes.

Be very careful of the steam when you cut through the plastic and foil to expose the steak.

Throw it on the grill for 5 minutes on each side and you have a very tender and tasty skirt steak!
