Make sure the grill is nice and hot and put your steaks down. Only flip the steaks once and be sure to cook them with the lid on. Once they're done to your liking, enjoy.

This will give you heat and flavor. After you mix everything together, taste it. If it isn't hot enough, add more cayenne. If you use regular table salt instead of kosher salt, start with 1 tablespoon and adjust as necessary.Seasoning Blend
5 tablespoons paprika
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon black pepper
1 or 2 tablespoons kosher salt
2 tablespoons cayenne pepper
2 tablespoons dried oregano leaves
1 tablespoon dried thyme leaves
Combine all in a small bowl and mix well to combine. Store covered in a cool, dry place. Makes one cup.
You could also buy a jar of steak seasoning, like McCormick Grill Mates Montreal Steak Seasoning measure out what you want to use and add cayenne pepper to it. I think they have one that's spicy too.

Here is the rub for beef we use when we are in the mood for a rub:1 1/2 teaspoons ancho chili powder, or other chili powder
1 1/2 teaspoons fine ground espresso coffee
1/2 teaspoon brown sugar
1/4 teaspoon dry mustard
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
If we aren't in the mood for a rub, we use Montreal Steak Seasoning just sprinkled on both sides of the steak and barbecue away!
A GREAT fish marinade:
1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
2 (6 ounce) fillets halibut (or other white fish)
In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.
Place the halibut filets (or other white fish) in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.

1 pkg. Italian dressing dry mix
1 can Coca-Cola
Mix the dry ingredients & rub on the steaks on both sides. Place in a plastic bag & pour Coca-Cola over the steaks. Marinate overnight. Remove steaks & grill them to desired doneness.

Combine all spices & salt
Store in a air tight container = about 2/3 Cup. Add more cayenne pepper for more heat. I use this on just about all kinds of steaks. Good on beef roast too. I have tried it on chicken also. Hope you like it
