2 tablespoons olive oil, in all
1/4 cup chopped onions
1/4 cup chopped celery
1 1/4 cups chopped green bell peppers
1/4 cup chopped green onions
1 tablespoon minced garlic
2 tablespoons minced shallots
4 bay leaves
2 tablespoons Essence, recipe follows
1 cup freshly shucked oysters, chopped, with their liquor
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1 cup bread crumbs
4 (8 ounce) pieces of filet mignons
1 cup roasted potatoes
1/2 cup meat jus
1 tablespoons shaved green onions
5 fried oysters
Preheat oven to 400 degrees. Heat 1 tablespoon of the oil in a saute pan, add the onions, celery, peppers, green onions, shallots, and garlic, and saute for 1 minute. Stir in the by leaves and Essence and saute for 2 minutes. Add the oysters, their liquor, and the water, Worcestershire sauce, and hot sauce, saute for 1 minute. Remove from the heat. Turn into a bowl, add the bread crumbs, and mix thoroughly incorporated. Season with salt and pepper.
Make a vertical incision in the side edge of each filet with a small sharp knife, and open up a pocket about three-quarters of the way into the meat. Sprinkle the remaining Essence all over the steaks. Stuff each steak with 1/4 cup of the oyster stuffing.
Heat the remaining 1 tablespoon oil in a large ovenproof skillet over high heat. When the oil is hot, add the filets and sear on both sides , about 3 minutes on each side. Finish the filets in the oven for about 5 minutes for medium rare. Place the potatoes plate with the filet on top. Spoon the sauce over the top and garnish with the fried oysters and green onions.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

Artichoke-Stuffed Mushrooms:1 1/2 pounds large fresh mushrooms
1/4 cup chopped onion
2 garlic cloves, chopped
1 tablespoon olive oil
1/4 cup dry white wine
1/4 cup soft breadcrumbs
1 (14-ounce) can artichoke hearts, drained and chopped
3 green onions, chopped
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
Rinse and pat mushrooms dry. Remove stems, and chop; reserve mushroom caps.
Sauté mushroom stems, onion, and garlic in hot oil in a large skillet over medium heat 5 minutes or until onion is tender.
Add wine, and cook 2 minutes or until liquid evaporates. Stir in breadcrumbs. Remove from heat, and let cool.
Combine onion mixture, artichoke, and next 5 ingredients. Spoon 1 teaspoonful into each mushroom cap. Place on a lightly greased rack in a roasting pan.
Bake at 350° for 12 to 15 minutes or until golden.
Yield: 25 to 30 appetizer servings

Start frying a chopped onion in extra virgin olive oil.Add some thinly diced bacon.
Then add some chestnuts (boiled peeled and crushed).
Finally some bread soaked in milk (cut out the crust).
Add any herbs and spices you like and maybe half a glass of wine or brandy.
Cook well before stuffing the chicken.
Coat the stuffed chicken with bacon slices, tie it up well (so the stuffing won't pour out or the bacon fall off) and you're ready to go :p
Sorry I do not specify the quantities and times but when I cook I always judge by sight. Anyway it depends a lot on ingredients and individual taste.Stuffed steak recipe?

I have done deer loin sort of like this before, but I butterfly it and stuff it with banana peppers and onions. I grill it... I also do potatoes, cabbage, onions and green peppers wrapped in aluminum foil and put it on the grill.... very good....Allrecipes.com has some really good recipes....for everything

1/2 teaspoon salt
1/4 teaspoon white pepper
2 lbs flank steak
1 teaspoon Dijon mustard
2 tablespoons vegetable oil
1/3 cup chopped onions
1 (4 ounce) can mushroom pieces, drained and chopped (or 1/2 cup fresh, chopped)
1/2 cup parsley, chopped
2 tablespoons chives, chopped
1 tablespoon tomato paste
1/2 cup dry breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon paprika
Gravy
3 strips bacon, chopped
3/4 cup finely chopped onions
1 cup hot beef broth, or more, to desired consistency
1 teaspoon Dijon mustard
2 tablespoons catsup
Lightly salt and pepper both sides of the flank steak.
Spread one side with mustard.
To prepare stuffing, heat vegetable oil in a frypan, add onion and cook for 3 minutes until lightly browned.
Add mushroom pieces and cook for 5 minutes.
Stir in parsley, chives, tomato paste, and bread crumbs, then season with salt and pepper and paprika.
Spread stuffing on mustard side of the flank steak, roll up jelly-roll fashion and tie with thread or string.
To prepare gravy, saute bacon in a Dutch oven until partially done.
Add the meat roll and brown on all sides, approximately 10 minutes.
Add the finely chopped onions and saute for 5 minutes.
Pour in the beef broth, cover Dutch oven, and simmer for 1 hour.
Transfer meat to a preheated platter.
Season pan juices in the Dutch oven with mustard, then salt and pepper to taste; stir in catsup.
Serve the gravy separately.
