T Bone Steak

Loretta Said:

How do you cook a mean T-Bone Steak indoors?

We Answered:

If you're cooking inside, use a heavy cast-iron frying pan and sear it. Preheat your oven to 350. Heat the pan slightly, add about 2 Tbsp olive oil until almost smoking. Place the steak in the pan, sear for about one minute, flip and sear the other side. Place on a shallow metal cookie sheet (needs to have sides) and finish in the oven (1/2" thick steaks-about 3-5 min).
You can sear 4-5 steaks, then finish them in the oven all at once. Just make sure not to stack them.
This has been known to make your smoke detector go off. Keep an eye on your heat setting. It is not a smoky method of cooking-just use your fan.

How to cook T-bone steak to medium or medium rare?

We Answered:

You must get a thick frying pan with a metal handle. You must have an oven with a broil setting. If so, read on:

Take a quarter cup of olive oil and add salt, pepper, brown sugar, and your favorite dried or finely chopped herbs (parsley, basil, thyme, etc.). Coat steak and cover overnight, place in fridge and remove an hour before cooking OR coat steak and let sit at room temperature for two hours.

GET TONGS!!!

Heat up the pan until you know it's seriously hot, but don't let it seat so much that it smokes. Place steak in center and listen to it sizzle. Wait one minute and turn. Now QUICKLY add a couple tablespoons of butter to the sides of the pan, drop in two peeled and crushed (not chopped) cloves of garlic, dip two sprigs of FRESH ROSEMARY into the garlicky butter and start coating the steak. Flip after one minute and repeat. After one more minute, place the pan of steak in the oven for four-five minutes one side, and three-four the other. Poke steak with fingers in its thickest section. If it feel like the fat part of the palm of your hand, you should be good.

THIS PART IS AWESOME!!!

Take your steak and remove it from the pan and place in a warm, deep dish. Take a peeled clove of garlic and slice in half. Take one half and wipe it ALL OVER one side of the steak. Then coat that very same side with a generous amount of butter. Flip and repeat. The butter will drain through the steak and mix with the juices creating the au jus that you will use later. Cover lightly in foil and let stand for ten minutes. Remove foil, slice, serve onto warm plates and pour sauce over each. Garnish with sprigs of rosemary if desired.

Serve with a green veg (asparagus works well) and a potato of your choice. Potatoes au gratin made with smoked gruyere goes AMAZINGLY well with this.

Red Bordeaux wine (French section of the liquor store) is the only wine to serve with this in my opinion, but some like Rioja from Spain (Marques de Riscal is the BEST!), Cab from Chile, or Malbec from Argentina. These wines are VERY full-bodied, open and decant (or just pour out a single glass and let stand) each and hour before serving.

Hope this helped.

Is it true that the carbonation and acids in soda can dissolve a T-bone Steak?

We Answered:

It's also true of orange juice. Citric acid is great for breaking down proteins. I have heard it will dissolve the bone too. Calcium is no match for acid.

The coke an cola is listed on this site below. Coke heading item 2. It says : 2. You can put a T-bone steak in a bowl of Coke and it will be gone in two days.

You decide if these guys are a valid or myth site.
