I am a former chef and used to go to a Ghanain place here in Toronto On Canada and have all those dishes, although my okra stew was made with goat, you can make it without, and the rice was a long grain one, Uncle Bens is nice, it stays together best.Groundnut soup is easier to make as a veggie option as it has not meat in it generally, I use the natural peanut butter from the health food store.
