1 cup dry navy beans
1 cup sliced celery
1 cup sliced carrots
1 cup chopped onion
3/4 cup chopped, fully cooked ham
1 teaspoon instant Chicken bouillon granules
1 teaspoon dried thyme -- crushed
2 bay leaves
1/4 teaspoon pepper

Rinse beans; drain. In a large saucepan combine the beans and 4 cups water.
Bring to boiling; reduce heat. Simmer, uncovered, for 2 minutes.
Remove from heat. Cover and let stand for 1 hour. (Or skip boiling the
water and soak the beans overnight in a covered pan.) Drain and rinse beans.

In the same pan stir together the beans, 4 cups fresh water, celery,
carrots, onion, ham, bouillon granules, thyme, bay leaves, and pepper. Bring
to boiling; reduce heat. Cover and simmer for 1 1/4 hours or till the beans
are tender. Discard bay leaves. Using a fork, slightly mash
the beans against the side of the saucepan to slightly thicken the soup.
Makes 4 servings. 247 calories per serving--2 grams fat per serving.

1 c navy beans
2 celery stalks
2 carrots
1/2 onion
2 ham hocks
: salt
1/8 ts black pepper
3 TB margarine
3 TB all-purpose flour

1. Pick over the dried beans and discard any debris.
Wash and drain. Put beans in a large pot and cover
with water. Let stand 8 hours or overnight. 2. The
next day, chop celery, carrots and onions into
1/4-inch pieces. (This is easier with a food
processor.) Drain beans. Add vegetables, 5 cups water,
ham hocks or ham bone, and pepper to taste. Add salt
if you wish. Bring to a simmer and cook over low heat
for 3 hours or until beans are tender. 3. Remove ham
hocks and set aside to cool. Remove meat from bones
and cut meat into half-inch pieces. 4. Put 2 cups of
the soup into a blender along with the margarine and
flour; puree. Pour this puree back in pan. Puree more
of the soup if you prefer a smoother texture. Add the
chopped ham pieces back into the soup. Simmer for
15-20 minutes until soup is slightly thickened.

Yield: 6-8 large servings. This soup is especially
good when sprinkled with a few drops of hot pepper
sauce just before serving.

Place all ingredients except frozen vegetables and cabbage in CROCK-POT. Cover and cook on Low 12 to 18 hours. Turn to High and remove ham. Add peas, and cabbage. Cook for 1 to 2 hours on High or until vegetables are tender. Serve large bowls of this thick soup with crusty French bread.

4 teaspoons margarine
1/2 cup diced onion
1 clove garlic, minced
8 ounces cubed cooked ham (1 inch cubes)
1/2 cup sliced mushrooms
4 cups shredded green cabbage
2 cups sliced carrots (1 inch thick slices)
1 bay leaf
1/4 teaspoon caraway seed
1/4 teaspoon pepper
2 cups water
2 packets instant beef bouillon
1 tablespoon cornstarch, dissolved in
2 tablespoons water
Directions
1In a 5 quart saucepan or Dutch oven heat margarine until bubbly and hot.
2Add onion and garlic and saute until onion is softened.
3Add ham and mushrooms and saute for 2 minutes.
4Add cabbage, carrots, bay leaf, caraway seed and pepper and continue sauteing for 5 minutes longer.
5Stir in water and broth, bring to a boil.
6Reduce heat, cover and let simmer, stirring occasionally, for 30 minutes.
7Stir in dissolved cornstarch and let simmer, uncovered, until mixture thickens, about 5 minutes.
8Remove bay leaf before serving.

How do you make Spanish lentil stew?

Spanish lentil and chorizo stew
serve four

150 g lentils
2 bay leaves
75 g Spanish chorizo, sliced
1/2 onion (preferably red), chopped
2 cloves garlic, chopped
200 g roasted and peeled chestnuts, chopped a bit
150 mL red wine
250 g canned tomatoes
1/2 tablespoon tomato paste
1 teaspoon smoked paprika
red chili flakes and salt to taste

Cook the lentils and bay leaves in a pot of boiling water for about 25 minutes, until the lentils are tender but still firm. Drain the lentils, saving the cooking water.

In the meantime, heat a splash of olive oil in a pot over medium-low heat and sauté the chorizo for a minute. Remove the chorizo and set it aside, then sauté the onion in the oil for about 10 minutes, until it’s soft. Add the garlic and sauté a minute or two, then add the chestnuts and cook them for a few minutes too.

Pour in the wine and simmer until most of the liquid has cooked off, then add the tomatoes, tomato paste, paprika, chili flakes if you’re using them, and salt to taste.

Simmer all of this until the mixture has thickened, roughly 15 minutes. Then stir in the lentils and as much lentil cooking water as you want (I make this like a thick lentil stew, but you can add more liquid if you want something more soup-like). Cook this together for another 10 minutes or so, adding the chorizo towards the end to heat it through. Season again if you need to.

SPANISH RECIPE FOR LENTIL STEW

Many traditional Spanish dishes include pulses from lentils to all sorts of small or flat or large beans, chickpeas, rice etc.

Basic ingredients

250 gr. lentils
1 chorizo (or a few slices if you can't get a small sausage-shaped one)
100 gr. serrano ham
1 large onion
1 small glass of red wine
2 cloves (optional)
1 red pepper (optional)
Half a small glass of olive oil
1 bayleaf
2 large carrots
3 small potatoes
2 cloves garlic
1 pinch of saffron
fresh parsley
salt and pepper

Steps:

1. Soak the lentils for half an hour. Even though small lentils in packets usually don't need soaking, Spanish women tend to soak anyway

2. Cut the ham and chorizo into dice-shaped pieces. Peel and wash the carrots and potatoes. Slice the carrots and halve the potatoes (unless they are very small). Wash and slice a small red pepper (optional).

3. Drain the lentils and put them in a saucepan. Add enough water to cover them and add the ham, chorizo, carrots, potatoes, bayleaf, pepper, parsley, a little salt, saffron and wine. Also add the cloves if you want the lentils to have a slightly spicey air to them. Put the pan over a low heat and cover.

4. Slice the onion and garlic and fry, stirring all the time. After a minute or so, add the sliced red pepper. This is optional and adds a slightly sweet flavour to the lentejas. When soft, add to the other ingredients in the saucepan.

5. Let the lentil stew simmer for at least 40 minutes. Boil off any excess liquid at the end.

ITALIAN ROAST BEEF

Brown chuck roast and put in crock pot.
Mix 1 can beef, 1 package Good Seasons Italian mix and 1 package Good Seasons Garlic Mix. Pour over meat and cook until done.

ITALIAN ROAST BEEF

1 tsp. basil
1 tsp. oregano
2 tsp. Italian seasoning
5-6 lb. rolled rump roast (round or any lean beef is good)
1 tsp. cayenne red pepper
1 pkg. dry onion soup mix

Put into roaster and rub dry ingredients. Pour 3 cups water in with beef (almost cover). Bake 2-3 hours at 300-325 degrees. Cool in juice. Remove when cool and slice thin. Put in back into the juice, then cover and simmer 3-4 hours.
