We Answered:Shrimp Quesadillas are my family's favorite. A bit high in fat, though.
Start by making a quick Shrimp Scampi:
1 1/2 pounds large shrimp (about 16 to 24)
1/3 cup butter
4 tablespoons minced garlic
2 tbs lemon juice.
Melt butter and add shrimp, garlic and juice. Cook about 2 minutes until shrimp are pink. Set shrimp aside and keep warm.
Then wipe out your skillet, spray with Cooking Spray.
Layer shrimp, your choice of cheese and any other ingredients you wish (onions, salsa) between two tortillas and pan-grill until cheese is melted and both sides are crispy.

We Answered:You might try this. Depending on how many shrimp you have. In a sauce melt two or three stiks of butter saute chopped onion in butter add a little garlic and salt pepper or lemon pepper spread shimp on a foil boat brush cooked ingedients on shrimp and heat in oven or better yet bbq smoke flavor realy adds great taste

Creole Shrimp Gumbo
3 lbs okra, chopped in 1/2 inch pieces
4 lbs shrimp peeled and deveined
2 lbs smoked sausage cubed
2 medium onions Chopped
2 cloves garlic, chopped
2 cans tomato sauce
2 T Liquid Smoke
1 T Zatarain's Creole Seasoning
1 t Zatarain's Blackened Fish Seasoning
1/4 t Zatarain's Cayenne Pepper
Â½ gallon water
In large boiling pot, fry okra until most of the moisture is gone on medium heat, stirring to keep okra from sticking to the pan. Add tomato sauce to okra plus 1/2 gallon of water. Simmer on medium for 10 minutes.
In a frying pan, sautÃ© shrimp until pink then add to okra. Next fry sausage and onions until limp. Drain and add to pot. Add seasonings and continue to simmer for 1 hour.
Serves 10 people.
