Perfect TurkeyA perfectly seasoned and juicy turkey.
INGREDIENTS
1 (18 pound) whole turkey, neck and giblets removed
2 cups kosher salt
1/2 cup butter, melted
2 large onions, peeled and chopped
4 carrots, peeled and chopped
4 stalks celery, chopped
2 sprigs fresh thyme
1 bay leaf
1 cup dry white wine
DIRECTIONS
Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot, and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight.
Preheat oven to 350 degrees F (175 degrees C). Thoroughly rinse the turkey, and discard the brine mixture.
Brush the turkey with 1/2 the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme, and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine.
Roast uncovered 3 1/2 to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180 degrees F (85 degrees C). Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter. Allow the bird to stand about 30 minutes before carving.

TURKEY ENCHILADAS WITH OLIVES -
Serves: 4
3 tbsp butter or margarine
2 cups fresh mushrooms, sliced
1/2 cup onion, chopped
3 cups cooked turkey, chopped
1 can cream of chicken soup, undiluted
1 cup sour cream
1/2 cup pimento-stuffed olives
1/2 cup toasted almond slivers
2 tsp chili powder
8 corn tortillas
oil
1/2 cup cheddar cheese, grated
Melt butter in a large saucepan. Add mushrooms and
onion; saute' until onion is tender. Remove from heat and
stir in turkey, undiluted soup, sour cream, olives, almonds
and chili powder.
Briefly cook tortillas in hot oil until softened; drain
on paper towels.
Place 1/3 Cup turkey mixture in center of each tortilla.
Bring opposite sides of each tortilla up over turkey
mixture overlapping edges at center. Arrange, seamside
down, on a greased 9x13 and a 8x8 baking dish. Spoon
remaining turkey mixture down center of each enchilada.
Sprinkle cheese on top.
Bake @ 400~ for 25 minutes until hot. May take longer
depending on oven.

Recipes using turkey meat? Or are you asking how to prepare a turkey for Thanksgiving??If it's for the latter, after I clean the turkey and pat it dry, I rub it down with olive oil and rub a seasoning mixture of garlic salt, pepper, cajon seasoning and rosemary all over the outside and inside the cavity. I put a couple of those small turkey timers in the breast area, stick it in one of those roasting bags with some flour and a couple of celery stalks and toss it in the oven. When the red button pops up, the turkey is done.
I have NEVER made a dry turkey. They're perfect every time!

2 tablespoons curry powder
2 teaspoon ground cumin
1/2 teaspoon salt
1-1/2 pound small turkey drumsticks
1 6- to 8-ounce carton plain yogurt
Directions
1. Combine garlic, ginger, curry powder, cumin, and salt in a small bowl. Spread spice mixture evenly over turkey. (Wear disposable gloves so the spices don't stain your hands.) Place spice-rubbed turkey in a glass baking dish; spoon yogurt over turkey. Cover and refrigerate for 6 to 24 hours. 2. Prepare grill for indirect grilling. Test for medium heat above the drip pan. Place drumsticks on the lightly oiled rack over drip pan. Cover and grill for 45 to 55 minutes or until an instant-read thermometer inserted in center of thickest portions registers 180 degree F, turning once. Makes 4 to 6 servings.

I'm sure you'll get lots of recipe suggestions, so I have some great tips for you. After lots of Thanksgivings, you learn what to do to make things go smoothly.Pre-cook. There are lots of dishes you can make ahead. Try and choose as many of these as you can. When the turkey comes out of the oven, you'll be busy with last-minute dishes like rolls and gravy and mashed potatoes, so anything that's pre-made and can just be warmed up is ideal.
Prep the day before. Chop everything. Onions, celery, carrots, etc. Make dressings. If there's something that needs to be cut or mixed or prepared, make sure it's done the day ahead. You'll thank youself on Thanksgiving.
Test your recipes. You still have a couple weeks til Thanksgiving... it's time to start testing! Test out recipes to make sure that a) you like them and b) they're not too complicated or time consuming.
