When I do this, I use an aluminum roasting pan (you can find them at any grocery store as well as the dollar store) and just cover the top with foil. Not only does it keep the juices from getting down onto the coals and creating a massive amount of smoke/steam, you get to use the drippings for gravy! I usually put a metal roasting rack in the pan too, so that the bird isn't soggy on the bottom.Willard Said:

Grilled Turkey LegsPrep Time: 25 Minutes
Cook Time: 50 Minutes Ready In: 1 Hour 15 Minutes
Yields: 6 servings
"Turkey legs are cooked in a sweet and spicy mixture, then grilled to crisp perfection."
INGREDIENTS:
1 (2 liter) bottle lemon-lime
flavored carbonated beverage
2 tablespoons sugar
2 tablespoons hot sauce
1 tablespoon crushed red
pepper flakes 1 tablespoon black pepper
1 large sweet onion, sliced
4 turkey legs
2 tablespoons honey
1 tablespoon steak seasoning
DIRECTIONS:
1. Preheat an outdoor grill for high heat, and lightly oil grate.
2. In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).
3. Remove onion slices from the mixture, and arrange on the prepared grill. Place turkey legs over the onions. Drizzle with honey, and season with steak seasoning. Cook, tuning once, 20 minutes, or until a crisp browned crust has formed on the turkey legs.

You will need to cut it up. The legs will need to be turned often, as will the wings. Fold and lock the wings back onto themselves. Split the breast leaving the bone on. Cook bone side down most of the time, but turn once in awhile. Cut out and throw the back into the freezer for soup some other day along with the neck and gizzards. Cook the thighs as you would chicken thighs turning a few times, keeping bone side down the most.Watch it closely it will work.
