Turkey Porcupines1 lb. ground turkey
1/2 cup uncooked long grain rice
1 onion, finely chopped
1 Tbsp. olive oil
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. olive oil
1 Tbsp. butter
2 tsp. sugar
1/2 tsp. dried basil leaves
1/2 tsp. dried thyme leaves
1 cup water
2 (8 oz.) cans tomato sauce
Cook onion in 1 Tbsp. olive oil until tender; let cool for 15 minutes. In large bowl, combine ground turkey, uncooked rice, cooked onion, salt and pepper and blend well. Shape into 16 meatballs. In large skillet, heat olive oil and add meatballs. Brown carefully, turning gently to cook evenly. Sprinkle sugar, basil, and thyme over meatballs, then pour over water and the two cans of tomato sauce. Bring to a boil, then reduce heat, cover and simmer for 40-50 minutes until turkey is thoroughly cooked, stirring occasionally.
Tex Mex Turkey Loaf
2/3 cup salsa
1 egg, beaten
1/4 tsp. pepper
1/4 tsp. salt
1-1/4 lbs. ground turkey
In medium bowl, combine salsa, egg, pepper, salt and mix well. Add ground turkey and combine. Form into a 6" round loaf and place loaf on a rack or balled up foil balls in a 3 quart crockpot. Cover slow cooker and cook on low for 4-5 hours, until turkey is thoroughly cooked.
Turkey Chili Recipe
2 cups chopped onion
4 garlic cloves, chopped fine
1 cup chopped green pepper
1/4 cup olive oil
2 (35 oz) cans stewed tomatoes, crushed
2 (15 oz) cans kidney beans, drained
2 Tbsp tomato paste
3/4 cup chicken or turkey stock
2 Tbsp chili powder (or up to 4 Tbsp if you like it really hot)
1 Tbsp ground cumin
1 Tbsp dried hot red pepper flakes
1 teaspoon dried oregano
1 Tbsp salt, plus more if desired to taste
1/2 teaspoon black pepper
3 to 4 cups of shredded, cooked turkey meat

Shredded cheddar cheese, chopped red onion, sour cream for optional garnish.
In a large, 8-quart, thick-bottom pot, cook the onion and green pepper over medium high heat, stirring, until golden, about 5 minutes. Add the garlic, chili powder, cumin, and red pepper flakes and cook, stirring, for a minute or two more. Add a bit more olive oil if needed. Add tomatoes, tomato paste, stock. beans, oregano, salt, pepper, and cooked turkey meat. Bring mixture to a simmer and reduce heat to low. Simmer, uncovered, for an hour. Salt to taste. Add 1 to 3 teaspoons of sugar to take the edge of the acidity of the tomatoes if desired. The chili may be made in advance and chilled for 2 days, or frozen for 2 months. Serve with shredded cheddar cheese, chopped red onion, and or sour cream. Serve alone, over rice, or with corn bread.
Lazygirl's Ground Turkey Stroganoff
1 (8 ounce) package uncooked egg noodles
1 tablespoon vegetable oil
1 pound ground turkey
1 tablespoon minced onion
1 cube chicken bouillon, crumbled
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup water
1 tablespoon paprika
salt to taste
Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes, until al dente, and drain. Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon. Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Season with paprika and salt. Serve over the cooked egg noodles.

I often substitute ground turkey for part or all of the ground beef in a recipe. Ground turkey can be a little more bland, so I do add some more spices. This is how I make turkey burgers for my family. You can use all turkey for this or half turkey and half ground beef:Grilled Turkey Burgers
1 ½ pounds ground turkey
½ onion, chopped
2 Tablespoons soy sauce
¼ cup ketchup
1 Tablespoon Worcestershire sauce
½ cup seasoned bread crumbs
Mix all ingredients together and divide into 6 equal portions. Shape each portion into a patty and grill until done. These can be prepped a few hours ahead,layered in between wax paper, and refrigerated until needed
