LOL...I to have tons of turkey left over...unfortunately i also have a very picky husband who does not eat left overs.so the only thing I will salvage is the broth....and my pups Rusty and Blitz with get the rest..Turkey ala king is a good way to use left over turkey
4 T butter
4 T flour
1 cup turkey or chicken broth
1 cup milk(or use just broth)
1 can of veggies of choice...a can of vegall works..or you can simple use canned peas or carrots.drain well
2 cups of diced turkey
Melt butter over med low heat...stir in flour and cook for 1 minute...slowly add turkey broth then milk.stir until it begins to thicken add veggies and chicken cook on low for 5 mins or until meat and veggies are heated through,season to taste with s&p,,serve over noodles,rice mashed potatoes or toast.
Turkey casserole
4 cups cooked pasta well drained
4 T butter
4 T flour
2 cups chicken broth
1 1/2 cup shredded cheese
2 C diced Turkey
1 sleeve of crackers crushed fine
1./2 c butter
melt butter over med low heat,stir in flour and let cook for one Min then slowly stir in chicken or turkey broth,,,once hot and slightly thick stir in 1 cup of the shredded cheese season to taste with s&p...... in a large bowl toss together pasta,the remaining 1/2 C cheese and turkey place in casserole dish and and pour sauce over the noodles, melt butter and add crushed crackers.conbine and sprinkle over casserole...cook for 30 mins at 350.
Turkey Salad
2 cups diced chicken(breast preferable)
1 T minced onion
2 T pickle relish
1 cup mayo
combine and serve on bread.
Turkey patties
2 C well diced turkey
1 T minced onion
1 egg
1/4 Cflour
2 sleeves crushed cracker
turkey broth or water
combine ingredients adding only 1/.2 C crushed crackers...add enough broth to make a the mixture bind...refrigerate for at least 2 hours.
form into patties and roll in remaining crushed cracked,pushing breading into patties...fry until golden brown

To get rid of most of the left-overs;Cut up some left-over turkey, throw into a boiling pan. Add leftover mashed potatos, gravy and stuffing. Add water. Salt and peper. Bring to a boil.
Add however much of each item you want, if you like turkey more like I do, add extra. If you like stuffing more, add extra. If you want the soup thicker add more mashed potatos. The heat loosens the stuffing and potatos and they get mixed in very well with the soup and adds unique taste.
It's the perfect hot breakfast, lunch and/or dinner to have the next day, especially when your cold. Very satisfying meal, little time to make (5 minutes prep time, 10 minutes heat time) and it tastes so, so, so, great. One bowl will fill you up but you always want seconds afterwards.

I love turkey pot pie's but I use rolled out pillsberry crescent roll dough for the crust, and use mashed potatoes to top it (like a shepards pie)Turkey soup~ I always simmer the carcass over low heat all night, so I have plenty of broth.
Turkey, stuffing & cranberry open faced sammies
Turkey tetrezinni~I take 2 cans of cream of onion soup, one can of water, bag of frozen boccoli turkey & cooked pasta, simmer untill heated through
We only have 4 of us and we always have ALOT of leftovers...even with a small turkey.
