2 tablespoons pan drippings2 tablespoons AP flour (cake flour or Wondra will also work)
1 cup fat free low sodium chicken broth, room temperature
Standard skillet (meaning not nonstick, a saucier works better if you have one)
Metal Balloon whisk
Put the pan drippings in the skillet over medium-high heat. Sprinkle on the flour and whisk vigorously everything is together and there are no flour lumps. Your mix will look something like this as you work it: http://www.apartmenttherapy.com/uimages/…
The mix, which french chefs call a roux (pronounced Roo), is ready when you stop whisking for a moment and it spreads out a bit.
Add the broth and keep whisking until the gravy has thickened. Serve it slightly thinner than you think it ought to be, to compensate for the thickening that will happen as you put it in a gravy-boat and walk it to the dinning room.

Use a Reynold's cooking bag (turkey size). Follow the directions on the box, IT'S VERY EASY!Wash the bird. Pat the bird dry with paper towels. Massage th bird with melted or softened butter. Season the turkey with seasoned salt, garlic powder, black pepper, and poultry seasoning.
Put a little flour in the roasting bag and shake it up.
Put the turkey in the bag.
Put a LARGE peeled onion INSIDE the bird.(it'll keep it moist)
Close and tie the bag up. Poke a few holes at the TOP of the bag so steam can escape.
Put the turkey in the oven on a baking pan until it's ready.
You can baste it after it is done cooking if you like.
Depending on the size of your turkey cooking times will vary.
EASY, and it'll be moist, tender, and delicious!

After all the hot turkey sandwich's use the meat left for a turkey pot pie, saute onion and carrot and potato with butter add a bit of chicken stock and some cream when the veggies are tender and throw in some peas then cook to a boil and lower heat if not thick enough liquid add a bit of flour (first mixed with water)maybe a 1/4cup. or less-cook till it thickens then toss in turkey meat left overs and stir, prepare pastry for pie top and bottom crust, place bottom crust in pie pan, prick bottom crust then place place on cookie sheet and bake in hot 400 degree oven till barely brown about 8-10 min---remove from oven and pour turkey filling into pie shell, then cover with a top pastry, brush with butter, slit holes in crust. Lower oven heat to 350--- Place pies on cookie sheet and bake in 350 degree oven for another 35 min. Next you can put the carcasss in a big soup kettle add 1/2 cup of pearl barley and add 2 cups water and 2 cups of chicken stock let it simmer for an hour-- Carefully take out the carcass (bones) strip off any meat that hasn't fallen off yet and keep it in the pot liquor- dispose of bones, let the broth with the meat and barley rest. Saute onions 1 cup and carrots 1/2 cup celery 1/2 cup and 1/2 cup turnip with 2 sticks of butter add a Tsp. of sugar, salt and pepper dash of thyme and rosemary saute till onions are translucent add the sauteed veggies to the broth bring to a boil,then simmer for 1 1/2 hrs. Add 1/4cup flour to 1/4 cup of cool water stir then add to liquid, take a cup of the left over stuffing and a cup of heavy cream, add to the soup- cook over low heat till well thickened, add chicken stock or water if too thick-- mixed and serve! Simple-- chill some cranberry sauce in a can -- make some stovetop stuffing from a box--rub butter all over the turkey and roast it in a 325 degree oven for 25 minutes per pound or longer . When you can grab a leg on it and shake it loose it is done.Rene Said:

To keep it simple use the ground turkey just like you would ground beef and either make turkey burgers or a Turkey meatloaf with the same kind of of seasonings you would use for regular hamburgers or meatloaf.. Hard boil some potato's and chill them and slice up an onion or two and fry the cold potato and onion slices in some extra virgin olive or butter and add salt and black pepper to taste. Thaw turkey & take out neck & gizzards(some people forget!). Rinse inside & out w/cold water. Pat outside w/paper towels. Salt inside cavity. You should stuff to make a moister turkey & better tasting stuffing(use bagged stuffing, follow directions on bag & add an apple to help keep moist. I also add onion & celery, & a little sage). If stuffing, make sure to tie together so stuffing doesn't escape. For turkey baste: melt 2 sticks butter, add a few teaspoons poultry seasoning, rub all over turkey, don't forget between wings & drumsticks. Bake at 325 for about 18 minutes per pound. If you have a rack to place the turkey on, it's easier 'cause bird won't stick to bottom of pan. If you get a turkey with a pop-up thermometer, that's best. I baste my turkey every 20 - 30 minutes to keep moist. Also....if turkey gets too brown before done, put foil over really brown parts so they don't burn (this happens sometimes to legs, wings). Let your bird sit w/foil over it, about 10 minutes b4 cutting.If you are making mashed potatoes, I save the water to make my gravy. (you can make potatoes early & heat up when dinner is ready. Cut potatoes in small pieces & boil till soft, remove from water, add a few tablespoons butter, milk & some sour cream. Hurry & beat b4 they cool too much or they will get lumpy). When bird is done, remove from pan, add potato water to bird pan & put on high heat. Scrape turkey drippings from pan & stir. In small bowl: use COLD water, add a few Tablespoons flour, salt & pepper & this liquid stuff called Gravy Master. Mix & add to potato water when boiling. Make sure to keep stirring. It will gradually thicken. Makes the BEST homemade gravy. Strain when ready & serve. All this is very easy!!!!!
